焦糖材料：（一開始糖水比例：糖4：水1，最後離火後，加入等量熱水融化成液態方便使用）
1.細砂糖300g
2.水75g
3.熱水75g
焦糖作法：
1. 細砂糖加水，上爐，煮沸至水分收乾，糖水開始變褐色。
Ps1.顏色依照自己喜好控制，顏色越淺，焦糖香味越淡，顏色越深，焦糖香味越濃，但是顏色過深可能會燒焦並產生苦味，因此需注意不要燒焦為原則。
Ps2.建議水分稍微燒乾，焦糖略微變色即可離火，加熱水，避免產生苦味）
2. 離火，加熱水攪拌至均勻。
Ps3注意：此時鍋內焦糖溫度非常高，熱水加入時會噴濺，需注意不要燙傷。
Ps4.熱水剛加入時，焦糖會有結塊現象，需攪拌溶解均勻，方能備用。
3. 倒入容器，放冰箱冷藏，使其凝結，備用。
Ps5.焦糖完成後，待其稍微冷卻，可以先品嚐測試看看是否是自己喜歡的焦味。所以一開始煮焦糖不要一下就煮太焦而變苦，這樣就沒救了，而是可以在變淺褐色後，關掉瓦斯，嘗試看看是否喜歡那樣的焦味，不符合的話在開瓦斯煮，如此反覆到自己喜歡的焦糖味。
焦糖雞蛋布丁材料：（8吋固定圓模1個，布丁杯、玻璃杯數個）
1. 鮮奶2000g
2. 細砂糖200g
3. 雞蛋14顆（全蛋）
Ps.比例：
鮮奶：蛋顆數＝140g：1顆
鮮奶：細砂糖＝10g：1g
8吋固定圓模1個：鮮奶1000g+細砂糖100g+雞蛋7顆）
焦糖雞蛋布丁作法：
1.雞蛋打散，攪拌均勻，備用。
Ps1攪拌時，攪拌器不要離開液體面，避免讓空氣拌入，亦即攪拌器在雞蛋液內沿著容器攪拌。）
2.牛奶+砂糖，攪拌至細砂糖融化。
Ps2.從冰箱拿出的冰牛奶，可以稍微加熱至室溫，方便砂糖融化，溫度不用太高，頂多加熱至手溫，或是稍高低一點，但手能碰觸的溫牛奶，避免太熱，雞蛋加入後煮熟了>
3.加入雞蛋液，攪拌均勻，形成布丁液。
4.布丁液過篩，靜置3～5分鐘。
5.布丁液倒入容器，靜置一會讓氣泡浮出，將氣泡撈掉或刺破。
6.烤或蒸：依照自己的設備決定用烤的或蒸的。
（1）烤箱：入烤箱，水浴法（烤盤放水約1～1.5公分高），上火140℃/150℃烤60分 。
Ps3.溫度依照容器大小改變，140℃～170℃之間
Ps4.8吋圓模上火140℃/150℃，烤60分
Ps5.布丁杯或玻璃杯 上火150℃/150℃，烤40分
Ps6.是否烤熟測試：8吋圓模，用手輕碰容器中心點，已經凝結不流動，即為烤熟。布丁杯或玻璃杯，稍微搖晃，看內部布丁液是否流動（底部焦糖會流動，但要觀察的是布丁液。）
（2）蒸籠：入蒸籠，小火（瓦斯的最小火，讓底部的水盡量不滾沸的最小火），蓋子開小縫，蒸40分，水滾後起算時間。（火越大，布丁內部越會產生氣泡）
Ps7.用蒸籠蒸出來等於甜蒸蛋，蒸的時候要控制火候，用最小火，讓水要滾不滾的狀態，並且鋁製蒸籠要開小縫。
7.享用：熱食享用很滑嫩。冰涼後食用很爽口。兩種方式皆很美味。布丁杯享用方式，直接用湯匙挖取，8吋圓模則先用抹刀在圓模周邊畫一圈讓周邊脫模，再用容器蓋住後迅速倒過來，即順利脫模。
心得：
焦糖可以事先入模，跟布丁液一起烤，亦可以等布丁烤好後才淋上去，兩種風味不同。
